Ingredients:
- 2 tablespoons olive oil
- 2 large chicken breasts
- 1 small onion, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup breadcrumbs
- 1/4 teaspoon thyme
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic and sauté until the onion becomes soft and translucent, about 5 minutes.
3. Remove the skillet from heat. Stir in the breadcrumbs, parsley, thyme, salt, and black pepper. Mix well until all ingredients are combined.
4. Carefully cut a pocket into the side of each chicken breast without slicing all the way through.
5. Stuff each chicken breast with the onion mixture, dividing the stuffing equally between them. Use toothpicks to secure the openings, keeping the stuffing inside.
